
Vinsanto del Chianti
Vin Santo is produced with Trebbiano, Malvasia and San Colombano grapes. It is bright amber yellow in color, with evident notes of dried fruit and chestnut flour on the nose, which tend to evolve into citrus aromas. As per Tuscan tradition, for Vin Santo, a careful selection of the grapes is made manually during the harvest, which are immediately spread out on mats to dry. When the grapes reach the right concentration of sugars, they are softly pressed. The must or “grape juice” is left to ferment in small chestnut barrels for at least 3 years
